Delicious ribs that you can pull apart. Everyone dreams of that. In the USA, they love the 3-2-1 method. Here, where the ribs are smaller, you don't have to wait as long. This recipe lets you make deliciously tender ribs at a low temperature. The secret is to cook them very gently, or use charcoal, and let them simmer long enough in apple juice and whiskey. You can sear them very briefly over a high flame. This will give you deliciously crispy yet tender ribs. Bon appétit!

Ingredients

  • 2 pork ribs
  • 100 g paprika powder
  • 2 tbsp salt
  • 2 tbsp coarse salt
  • 2 tbsp garlic powder
  • freshly ground pepper (to taste)
  • generous dash(es) of olive oil
  • 350 ml apple juice
  • 150 ml whiskey
  • 3 tbsp brown sugar
  • 100 g butter (or olive oil if you want to keep it a little less fatty)
  • 1 handful of thyme sprigs

Preparation

  1. Mix all the herbs together with the olive oil. Rub the mixture thoroughly into the ribs. Leave the ribs to rest in the refrigerator for several hours. The longer, the better.
  2. Lightly heat the oven and let the fire die down until you reach a temperature below 100°C.
  3. You can also use charcoal: fill the basket with charcoal and light it with 2 firelighters.
  4. Place the ribs in the oven. You can use an oven dish, a grill rack, or a standing rack. Cook the ribs for 1.5 hours at a temperature of around 100°C. Avoid flames or coals that are too hot.
  5. (If you have smoker pellets and a smoker, you can smoke the ribs during this first cooking stage: to do this, fill the smoker or pellet tray with pellets, light a firelighter cube and place it at the end, blow it out after 5 minutes and place the smoker in the well-sealed oven).
  6. Remove the ribs from the oven and add the sugar, apple juice, thyme, and whiskey. Cover with aluminum foil (if using a baking dish) or wrap completely in aluminum foil. Return the ribs to the oven and cook at a temperature below 100°C for 1.5-2.5 hours.
  7. Remove from the oven. Preheat the oven to a low temperature. There may be glowing coals or flames present. Now you can briefly sear the cooked ribs to achieve a delicious crispy crust. You don't need to sear for longer than 5-15 minutes on each side, depending on how hot the oven is.
  8. The ribs are now ready! Remove them and pull them apart. Enjoy!
