About this recipe
This recipe is inspired by a recipe from the popular chef Ottolenghi. The recipe has been adapted for the wood-fired oven. The wood aroma brings out the sweet notes of the grilled grapes even more. The marinade with fennel seeds adds a delicious Eastern flavor.

Ingredients
- 2 balls of burrata
- 200 g blue or red grapes (seedless)
- 200 g white grapes (seedless)
- 50 g fennel seeds
- 5 tbsp white wine vinegar (or tarragon, apple, light balsamic)
- 5 tbsp olive oil
- 2 cloves of garlic
- 2 tbsp brown sugar (cassonade or dark brown)
- pepper, salt, and optional dried thyme
- 20 sturdy skewers
Preparation
marinate the grapes
- Place the skewers in a container of water so that they become moist. We do this so that they don't burn in the oven later.
- Toast the fennel seeds very briefly in an oven dish in the wood-fired oven so that they smell deliciously spicy. You can also do this in advance in a frying pan on the stove.
- Combine the oil, vinegar, fennel seeds, pepper, salt, and sugar in a bowl. Crush the garlic cloves with a garlic press and add them to the marinade. Stir well.
- Wash the grapes and place them in a large bowl. Sprinkle with the marinade immediately and leave to rest for at least half an hour.
- Skewer the grapes, alternating colors for a visually appealing presentation. Important: do not discard the remaining marinade. You will need it later.

- This dish can be prepared at temperatures ranging from 200 to 450°C. It can be cooked over a fairly high flame, but this is not essential. If not, it will simply take a little longer.
- Slide the grill rack into the Original with the plancha side facing up, or use a stainless steel baking dish. If you are using the Mini, use a cast iron grill pan or a stainless steel baking dish.
- Place the baking dish in the oven, or arrange the skewers in the grill pan or on the plancha. Grill the grapes for at least 3 to 5 minutes.
- Take a flat dish and place 2 balls of burrata on it. Arrange the grape skewers around the burrata. Pour the remaining marinade over the burrata balls. Enjoy!
