Grilled Peach (with burrata or Greek yogurt)

About this recipe 

This dish is summer on a plate. Sweet peaches with spicy honey on the Vonken grill, accompanied by deliciously creamy burrata as a starter, or rich Greek yogurt as a dessert. Finish with fresh herbs from the garden, a few pine nuts, and crema di balsamico to find the perfect balance between sweet and salty, savory and creamy.

Ingredients

  • 6 ripe peaches
  • 4 burrata cheeses or about 150g full-fat Greek yogurt per person
  • handful of pine nuts
  • 16 fresh basil leaves
  • 8 sprigs of fresh thyme
  • balsamic cream
  • freshly ground salt and pepper
  • optional: spicy honey

Preparation

  1. Light the fire in your oven. Let it burn for a moment, then slide a cast-iron grill pan into the oven to heat it up thoroughly (in the case of Vonken Original, you can use the grill plate accessory).
  2. Select beautiful ripe peaches and cut them in half, so you can easily remove the pit without losing any of the flesh. Cut into slices about 1 cm thick and brush with a few teaspoons of spicy honey and a few drops of olive oil.
  3. Once your grill pan or plate is hot, you can first briefly toast the pine nuts. Be careful, as they burn quickly. So don't walk away and stir constantly, especially if the heat is high.
  4. Let the grill pan or plate heat up a little longer and place the peach slices in or on it. To get a nice grill pattern, it's best to leave them alone for a while. Keep a close eye on them and, depending on the intensity of your heat, turn them over after about 3 minutes.
  5. Now that the peaches are grilled, you can start assembling your plate. If you're using burrata, tear each burrata into quarters per plate and divide the peaches among the plates. Place them on top of the burrata and collect as much of the sweet juice released during grilling as possible.
  6. If you are making a dessert version with Greek yogurt, place it in a small bowl and add the peaches and juice.
  7. Finish with the fresh basil and thyme, crema di balsamico, and roasted pine nuts. If you are making the version with burrata, add some freshly ground pepper and salt. If using Greek yogurt, you can add a little more (spicy) honey!
  8. Enjoy your meal!
