Savory (Sourdough) Pancakes

You may already know that the Vonken plancha can be used for many things, but these savory pancakes are sure to bring everyone together around the fire at your next outdoor brunch. Whether you make the sourdough or yeast version, add a nice piece of crispy bacon and some maple syrup for a pancake that tastes fresh, sweet, and deliciously salty all at once. Fancy something different and have a (cast iron) waffle iron? This batter also works very well for delicious (savory) waffles. Experiment and add tasty flavor combinations such as cheddar and jalapeño!

Ingredients

preferment with yeast

  • 1 g instant yeast
  • 400 g (buttermilk) milk
  • 20 g maple syrup
  • 270 g flour

pre-ferment with sourdough

  • 200 g sourdough starter
  • 300 g (buttermilk) milk
  • 20 g maple syrup
  • 200 g flour

when you are baking

  • 2 eggs
  • 40 g butter (melted)
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder

extras

  • thin slices of bacon or toppings of your choice (such as cream cheese, fresh figs, etc.)
  • extra maple syrup

Preparation

the night before

  1. If you are making the batter with yeast or sourdough, add the relevant ingredients. The sourdough does not even need to be very active, as we will leave it to work overnight in a pre-ferment. Use buttermilk for a fresher taste (added value!). Mix the yeast/sourdough with the maple syrup, (buttermilk) milk, and flour in a storage container until there are no more lumps visible, then close the lid. You can simply leave the container at room temperature. Due to the CO2 that will develop over the next 12 hours, you may find the lid loose the next morning, but that's no problem.

the next morning, before you start baking

  1. Add the eggs, melted butter, salt, baking soda, and baking powder to the fluffy mixture and mix with a spatula. Tip: if you like an extra fresh note, try adding some lemon zest.
  2. In the meantime, light the fire in your Vonken and let the cast iron plancha or a separate cast iron pan heat up.
  3. Once your griddle or pan is hot, you can start cooking: melt a little butter where you are going to cook (or use a neutral oil), and spoon the batter onto the griddle or into your pan with a small ladle. Note that the griddle will be hottest on the side where the fire is burning, so keep this in mind when turning and flipping the pancakes while cooking. However, keep the hottest spot close to the fire for the bacon, which you can fry until crispy alongside the pancakes.
  4. Stack three pancakes, top with crispy fried bacon, and drizzle generously with maple syrup. Enjoy!
