Grilled & caramelized pineapple ​ 

Ingredients

  • 1 ripe pineapple
  • a few marshmallows

Preparation

  1. Place the whole pineapple on the stone oven floor between 150° and 300° C, or on a bed of glowing coals, without flame.
  2. Leave to caramelize for half an hour to an hour, turning twice. Don't worry if the pineapple loses juices that smell burnt: the pineapple itself is not affected inside, and the oven floor is self-cleaning as soon as you light the fire again after cooking.
  3. Remove the charred pineapple from the oven and carefully cut off the burnt skin with a knife.
  4. Cut into pieces and serve. Top with marshmallows that gradually melt on the still-warm pineapple.
