Salmon with lemon & crispy baby potatoes
Ingredients
- 1 kg baby potatoes (or waxy potatoes)
- 4 salmon fillets weighing 200 grams each
- 1 lemon
- olive oil
- salt and pepper
Preparation
- Cut the baby potatoes in half lengthwise, place them in a baking dish, and season with olive oil, salt, and pepper. Cover tightly with aluminum foil.
- Bake in the oven for 30 to 40 minutes at 200°C (or, if the potatoes have been pre-cooked, bake for just 10 minutes in the oven). For a crispy touch, remove the aluminum foil for the last 5 minutes.
- Place the salmon steaks in an oven dish, season with salt and pepper, and drizzle with olive oil. Cut the lemon into thin slices and arrange them on top of the salmon. Place the oven dish in the oven for 10 to 15 minutes at 200°C. Alternative: bake the salmon for 10 minutes on the preheated Vonken grill plate in the oven.
