Sweet and spicy? Yes, it can be a delicious combination. Honey has long been used to marinate spare ribs, caramelize meat, etc., but with this chili honey, you can give all kinds of dishes a delicious spicy kick—think sweet yet spicy chicken legs or a soon-to-be indispensable topping for your pizza.

The concept is simple and there are only three ingredients, so be sure to choose high-quality honey and organic peppers (try experimenting with different varieties). I made the jar of honey pictured above with small peppers that grow on the windowsill in our kitchen, so that's another option!

Ingredients

  • 500 g (preferably raw & organic) honey
  • 3 (or to taste) red peppers
  • 2 tsp harissa
  • dried chili

Preparation

  1. Wash the red hot chili peppers (my favorite band) thoroughly, dry them, and cut off the stem and green part. Make four cuts in the pepper.
  2. Do you already have a nice fire going in your Vonken? Then you can also experiment with roasting the peppers before adding them to the honey for extra smoky flavors.
  3. Dip the peppers well into the honey jar, and add dried chili if desired. Decide in advance how hot you want the honey to be, and start modestly with two peppers if you prefer a slightly spicy touch. You can of course taste it after a week and always add more.
  4. Mix the harissa into the honey for a slightly spicy kick and an extra beautiful color. (Even better if you can make the harissa yourself!)
  5. Seal and leave at room temperature. The longer you leave the honey to do its thing, the more the peppers and herbs will blend their juices and flavors with the honey. Taste it on day 1 and day 5 to notice the difference, and if necessary, adjust it to your taste next time.
