About this recipe
In this recipe, a few simple ingredients are transformed into powerful flavor enhancers, thanks to the heat of your wood-fired oven. This fire-roasted salsa is perfect to prepare as an appetizer while your oven is heating up, kicking off the evening with your guests. Get creative with the ingredients and serve with nacho chips, crackers, or flatbreads, for example.

Ingredients
- 400 g large cherry tomatoes
- 1 small sweet pointed pepper
- 1 clove of garlic (or 2 small ones)
- ¼ shallot
- ½ lime
- 1 jalapeño pepper
- additional chili peppers to taste
- olive oil
- sea salt
- optional: fresh garden herbs
Preparation
- Light the fire in your Vonken. We're going to roast the ingredients well and even let them char under the flame, so you don't necessarily have to wait until the oven is fully heated up.
- Crush the garlic clove with the flat side of a chef's knife and make a lengthwise cut in the shallot. Place your tomatoes, sweet pointed peppers, chili pepper(s), lime, any herbs, garlic, and shallot in a cast iron pan, oven dish, or stainless steel bowl (in Vonken Original, you can also use the grill plate).
- Grill under the flame for about 10-15 minutes. Shake occasionally using oven gloves. We want to release the aromas, cook the ingredients, and char the skin.
- Remove the pan from the oven and let it rest briefly so that the skin comes away from the flesh more easily.
- Remove the black skin from your tomatoes and pointed peppers, garlic, shallots, and chili pepper(s). Cut open the chili pepper(s) and remove as many of the very hot seeds as possible for a milder spicy flavor.
- Take the mixing cup from your blender or hand mixer. Put everything in the cup, squeeze the half lime (you can also add the pulp), add olive oil, pepper, and salt (omit any burnt herbs). Blend briefly for a coarse result, or long and thoroughly for a velvety smooth dip.
- Serve lukewarm with nachos, crackers, or bake some fragrant flatbreads in your oven to dip. Bon appetit!
